Croquetas are a beloved Spanish specialty inspired by French croquettes introduced to Spain in the 19th century.
Over time, Spain transformed the recipe into a national comfort food, traditionally made with a creamy béchamel sauce mixed with ingredients such as ham, chicken, cod, or mushrooms, then coated in breadcrumbs and fried until golden and crispy.
Croquetas became especially popular as a way to use leftovers while creating a rich and flavorful tapas dish.
The handwritten notes are in Spanish.
"La Choucroute" is made with fermented cabbage slowly cooked with white wine, juniper berries, and spices, then served with sausages, smoked meats, and potatoes.
Originally a practical way to preserve vegetables during winter, it evolved into a hearty and convivial meal loved throughout France, particularly in Alsace where it remains a culinary icon.
